Internship - Food Preparation


Winderong Farm is offering a 6 month internship in sustainable food preparation.

Winderong Farm is an experimental project encompassing regenerative agriculture, bush regeneration, permaculture, sustainability and community living. Our farm is set on 810 acres of stunning wilderness and farmland. Our community consists of a group of 10 to 15 volunteers and paid workers, along with a host of beautiful and much-loved farm animals and wildlife. We aim to embody the permaculture principle of “we are nature working” and develop a deep understanding and respect for the land we steward, all the time aiming to regenerate the earth and learn from her and each other.

Our kitchen prioritises holistic sustainability by creating food that's nourishing, seasonal, and minimises waste. We provide delicious food for all residents and volunteers, and we provide lunch for our paid staff who live offsite. Through our garden and orchard, we aim to grow as much of our own veggies, fruits, and herbs as possible, and are aiming to increase and diversify our production. We are keen foragers and integrate many wild herbs, fruits, nuts, and mushrooms into our diets too. We have chickens for eggs and meat and we holistically manage beef cows who provide us with meat, tallow, and bone broth. We also have a small herd of jersey cows and use their raw milk to make delicious products such as butter, cheese, yoghurt and gelato.

To make the most of our produce, dairy and meat, we do heaps of fermenting and preserving like curing, pickling, dehydrating, chutney making etc. We celebrate traditional methods of cooking as well as creative experimentation so that we can best adapt to whatever abundance we're faced with, be it 50 litres of milk or 100 kgs of kiwi fruit. We love having delicious and diverse goodies to incorporate into our diet and we sell some of these at the Kangaroo Valley Farmers market each month.

We are part of a great community of other growers and farmers and often get to swap produce with them, so we sometimes have other animal protein to work with ... We currently have a smoker full of salami thanks to some great farm friends who gifted us 3 pigs!

Other areas the internship will focus on:
· Rostering of cooks
· Kitchen management
· Food ordering
· Menu planning
· Foraging
· Helping cater for community events
· Growing & harvesting food
· Best practice storing of produce

You’ll also be involved in various tasks to support the day-to-day running of the farm and community, e.g. maintenance, gardening, and house cleaning.

Skills will mainly be learnt on the job, with the opportunity for fortnightly mentoring meetings and visits to other local farmers/food producers. We are happy to tailor the internship to your interests and meet any institutional requirements you have if you are doing formal study. We also welcome couples and families to apply.

Internship hours are generally 8:30am-12:30pm, Monday-Friday (20 hours per week). Occasional weekend work is required.

Accommodation in a decked-out bus and delicious nutrient-dense food is provided.

Interns who are interested in longer-term living/working arrangements at Winderong Farm are strongly encouraged to apply. We offer pathways to employment for committed interns, and are also open to team members developing their own micro-enterprises on the farm. For successful applicants, some hours of paid work are generally available at Winderong after a 2 week trial period.
